Watermelon “Ceviche-Style” Salad
Serves up to 4
1 ½ Cup watermelon, cut into 1 inch cubes
1 medium cucumber, sliced into ¼ rounds
1 medium green apple, sliced into small wedges
1 medium orange, segments cut into thirds
½ Cup chopped walnuts
2 cloves Onyx Black Garlic, minced
½ Cup chopped snap peas
¼ Cup chopped red onion
¼ tsp. powdered ginger
Juice from one lime
Juice from one small lemon
1 tsp. Bragg’s Aminos
1 tsp. rice wine vinegar
½ tsp. oregano
1 small Ancho OR Serrano pepper (Ancho is mild / Serrano is hot), chopped
½ tsp kelp flakes
2 T fresh cilantro, chopped
Pink salt and pepper to taste
Soak the walnuts while preparing remaining ingredients and then drain and chop. Add all ingredients together and chill for at least 20 minutes.
The flavor is well balanced, light, not overly sweet, yet refreshing and savory with a juicy texture.
